Here's how I typically move stuff from one box to another:

rsync -avx --partial --numeric-ids -e ssh root@host:/path/ /local/path

-a means "copy all relevant file attributes like mod-date, owner, file
perms, etc"

-x means "copy from a single partition - don't drill down into other
mounted partitions under this path"

--partial means "keep partially copied files" rather than delete them if
the rsync is interrupted as is the default

--numeric-ids means "keep the original uid/gid". If you leave off this
option, rsync will try to map remote username and group to a local
matching username and group *either of which might be a different
uid/gid* rather than keeping the same uid/gid as on the remote box.

It sounds like you either need to use this last option, or are using and
shouldn't be.
