In my copy of Mozilla (0.9.5) there is a "reset" button on the "Helper
Applications" screen. Unfortunately, I'm guessing it resets ALL the
helper applications you've already picked.

Alternately, you could go into your .mozilla directory and poke around
the config files and delete a line or two where appropriate.
