Another great tool for managing consoles on devices for simultaneous
administration is "conserver" (previously conserver-GNAC):

I've managed many a Unix shop with conserver and serial consoles for
remote rebuilds when necessary.

The initial question was how to relate to a serial port with bash. This
is really devolving into "what other tools can I use to log collected
data from a serial port". Macy's suggestions are good ones.
