If you're interested in a modular synth, spiralsynthmodular sounds decent
and has most of the things you would need to generate patches.

Nyquist is a lisp-like language with unit generators ala Music-N

zynaddsubfx is an additive-subtractive softsynth that is pretty decent and
comes with a decent library of instruments
