I've heard Really Good Things(tm) about Knoppix:

but I haven't used it myself to know for sure. It claims to be a very
modern and complete (2.4 kernel, KDE3, XMMS, Gimp, OpenOffice and tons
more if you can just imagine) Linux distro that runs entirely off of
CD. It says it is "A LinuxTAG Project", one of the big German Linux
user groups, so I'm sure it is high-quality.
I've downloaded the ISO and it's just waiting to get burned and tried
out.
