I'd very much appreciate this. I never took any EE classes or got to
play with one of those breadboard things in school. What materials do
I need to get started?

I'm also interested in looking at this approach. So this would
possibly only need an analog-digital converter?

If I understand what you are suggesting here, it was an avenue I was
considering. Are you suggesting two audio lines going into mic/inputs
in the soundcard... one being from the guitar which will be the
wave-form to manipulate, the other being from a volume pedal (with
sine-wave or some kind of constant signal input), and use the
amplitude of the output to determine the intensity of the effect to
apply? Or did you mean something different?

That seemed the safest way to do it (less chance of me frying
something with too much signal), but I'd rather learn more about the
analog to digital converter methods if that is doable. I'm looking
forward to playing with this... I appreciate your time/expertise!
