Sure you can. Just modify your /etc/apt/sources.list to use the flavor
of Debian you desire. If you change from stable to anything else (sarge
or sid) run:
apt-get update
apt-get dist-upgrade

if you think that dist-upgrade is going to something nasty, you can:
apt-get -u upgrade
