It's an excellent idea... I have multiple Fedora, Solaris, BSD instances running
various applications such as OpenLDAP/automount, DNS, web, etc.. For people who
would like to jump right into a technology but don't want to go through the setup
procedure (e.g., content developers, testers, etc..) it's a perfect solution. With
LDAP, for example, the initial configuration can be somewhat involved. Once running,
it's much easier to maintain. With a VMWare image someone could give a demonstration
then hand out CDs with the server pre-installed for people to play with or
customize. They could even use it on their own system as an appliance with
relatively little work.
