For SMTP:

Sendmail
Postfix
Exim
Qmail
{insert your SMTP MTA of choice here}

Pick one you like that can deliver mail locally to a mail folder
structure that your IMAP/POP3 daemon can grok.

For IMAP/POP3:

Dovecot
1. Uses mbox/maildirs
2. Caches.
3. Has bug workarounds for numerous broken MUAs.

Cygnus
1. Users its own storage (not mbox/maildirs)
2. Is very fast.
3. Can be tricky to build and install from the ground up for a novice.

Wuimap sucks. Avoid it if you can. Seriously. Use Dovecot instead.

There are dozens of others. I'm partial to Dovecot myself. We use
Sendmail out of habit.

Postfix + Dovecot is a good pairing.

If you want calendaring, there are various Outlook plugins out there
that can publish to a WebDAV or FTP sharepoint.

If you need more integration than this, and want a bit more handholding,
SuSE Linux Openexchange (SLOX) is what I would recommend you look into.
