outside VMware, on desthost: netcat -p port > /dev/destHD

inside VMWare: netcat desthost port < /dev/sourceHD

If they're journalling filesystems you can even do it while the system is
"live", but that will result in an image that looks as if it has suffered a
power cut; lockfiles may be scattered about.
