I'm going to agree with Paul and recommend Postfix. I've been running
it for years, and it's never failed me. It's easy to configure, all
the pieces of it run as separate executables with minimal permissions,
and it's easy to put together with something like courier-imap.

I may be missing something, but can't you check the "leave messages on
server" option in both clients? Other than that, postfix +
courier-imap ( maybe + squirrelmail if you want to provide them a web
interface too ) will work great.
