Well, with two cards you'll get 2 gpu's. More heat, less space and
less airflow which might equal having to get a bigger fan or more fans.
Maybe better, maybe worse. Performance may be better because of the 2
dedicated gpu's though. I think that the dual head will be easy either
way. You either set one card with something like a:
BusID "1:0:0" and a:
BusID "1:0:1"
or just have 2 different Device sections with 2 different cards. The
server layout section and "clone" or "xinerama" type options usually set
the other stuff up for X.

What window manager are you using and are you going to do xinerama or
independent monitors?
