"init 3 ; init 5"? Or are there other graphical users you don't want to
disturb?

Bind a keystsroke to the "log off Gnome" event? (WAG, I use FVWM2+XFree86.)

You could probably kill whatever gdm launches -- "gnome-ui" or whatever
it's called.
